Tempeh Power Bowl

Tempeh, a fermented soybean food rich in pre- and probiotics can boost microbiome health and its protein and fiber package can not only help you feel full, but potentially also reduce LDL (‘bad’ cholesterol) levels. In fact, researchers have started calling tempeh a superfood. It typically contains 31 grams of protein per cup.

Ingredients

8 oz tempeh

1 tbsp soy sauce

1 tbsp maple syrup

2 cups brown rice

1 sweet potato, cubed

1 cup kale

2 Tbsp tahini

1 Tbsp lemon juice

1 minced garlic clove

Water as needed

How to make: Cube the tempeh and marinate it in the soy sauce and maple syrup. You can place all three ingredients in a lidded bowl and shake. Bake uncovered at 375°F for 20 minutes. 

Prepare the sauce: Mix the tahini, lemon juice and garlic, and thin as needed with small bits of water to reach your desired consistency. We recommend a sauce that’s not too thin.

Cook the brown rice per instructions or your usual method, roast and cube the sweet potato, and steam the kale. Serve the cooked tempeh over the rice, potato cubes, and kale, and drizzle with the tahini sauce.
